Why Most Non-Alcoholic Wines Fail (And How We Solved It)
The history of non-alcoholic wine is riddled with disappointment. Traditional attempts often resulted in flat, cloying, grape-juice concoctions that lacked the acidity, tannin structure, and complexity that wine lovers expect.
The reason is simple: alcohol provides body, carries volatile aromatic esters, and balances acidity. When you violently boil wine to evaporate alcohol, you destroy the very compounds that give sparkling wine its soul.

The Three Pillars of Cold-Vacuum Dealcoholization
To protect the delicate nuances of Chardonnay and Pinot varieties, Trumpaign uses state-of-the-art spinning cone column and low-temperature vacuum distillation:
- Primary Aromatic Fraction Capture: Under gentle negative pressure, the volatile floral and fruit aromatics are separated at room temperature before any heat is applied. These precious esters are preserved in sterile cold storage.
- Low-Temperature Ethanol Extraction: Under ultra-high vacuum conditions, alcohol evaporates at a mere 28°C (82°F) — cooler than a warm Italian afternoon. The wine never boils; its structure, organic acids, and polyphenol backbone remain completely undamaged.
- Aromatic Re-integration & Carbonation: The captured original varietal essences are folded back into the dealcoholized wine, followed by secondary cold micro-effervescence injection that creates velvety, persistent bubbles.
